December 24 and 26th
On these two days guests can choose between two appetizers, veal tartare “tonnato” with a gel of cornichon, daikon cress, corn lettuce and a focaccia crostini or a purple potato salad with smoked Scottish salmon & Dutch eel, cauliflower & truffle cream and lime vodka crème fraiche.
The second course is a cream of salsify with prosciutto ham, savory herbs and a ‘pinwheel’ of mushroom.
The main course offers two choices: 1) Filet Mignon with duck liver, roast garlic & tamarind jus, grilled pumpkin, pan fried Belgian endive with honey and sweet potato and bacon ‘mille-feuille’ and 2) ‘Blackened’ grouper fillet with fennel jus, grilled pumpkin, pan fried Belgian endive with honey and risotto rice
Do save room for dessert… it will be scrumptious!
December 25th FULLY BOOKED
On the 25th of December we will spoil you with our six course Christmas menu.
To start the evening we will welcome you with a sparkling aperitif, followed by a vegetarian amuse; roasted red beet ‘bonbon’ with goat cheese, balsamic syrup, grilled sour apple and pistachio.
The first appetizer consists of veal tartare “tonnato” with a gel of cornichon, daikon cress, corn lettuce and a focaccia crostini, followed by above mentioned soup as a second appetizer.
The third course is an Atlantic blue crab mousseline with shrimp tempura, lobster beurre blanc, sea lavender and nori leaf.
Again the main course is a choice between a good steak or local fish.
Needless to say… you have to save room for dessert… you do not want to miss the almond bavarian cream and pistachio sponge with espresso anglaise, amarena cherries, passion fruit gel and granola of barley & almond!
