New Special Menu
It is time again for a delicious new Special Menu! For Naf. 71,50 you can enjoy a three-course dinner with a choice of starter, main course and dessert. The chef and his team have chosen the flavors and ingredients of this season for the menu. Although you do not speak of real seasons on Curacao, the chef still takes into account which vegetables and ingredients are freshly available, both from the Netherlands and locally. Fennel is such a vegetable!
Fennel is a bit of a forgotten vegetable, while it is actually a real tasty gem. It comes in different shapes and sizes: slightly thicker with a sweet taste, and a slim version where the taste reminds you of licorice. The seeds can also be used as seasoning.
In the Special Menu the fennel is used as the main ingredient in a delicious creamy fennel soup with salmon and horseradish. It is also lightly grilled as a side dish, served with the halibut, one of the main courses from the menu.
Truffles and mushrooms
For the autumn feel in a menu, you think delicious ‘earthy flavors’… and so the truffle can not be missed!
The second appetizer, the Carpaccio of roast beef with goat cheese crumb tastes better with a ‘touch’ of truffle, in this case worked into a nice vinaigrette.
The oyster mushroom is popular for its soft aromatic taste and is therefore a nice mushroom to use for light ‘autumn dishes’ on a tropical island! In the Special Menu the oyster mushroom is the side dish of the chicken rouleaux wrapped with bacon. The dish is also served with tagliatelle pasta, cream of cherry tomato and Parmesan cheese.
Watermelon and citrus
Not necessarily characteristic autumn fruits you would think, but in a warm climate the ideal fresh end of a meal! That is why the chef has incorporated them into the two dessert options of the Special Menu.
The watermelon is soft and fresh and combines well with the panna cotta of orange & Curacao liqueur and the aromatic, roasted hazelnut granola.
Indonesian cake is made with various ‘warm’ herbs such as cardamom, clove, cinnamon and nutmeg. The dessert with Indonesian cake and chocolate mousse is extra surprising by the finish with pistachio nuts and Yuzu syrup. Yuzu is known as the most aromatic of citrus fruits. This juice is made of ripe, freshly pressed Yuzu, and some sugar. The taste is fresh, floral and slightly acidic.
