To support local farmers, producers and fishermen in Curacao during these &#8216;Corona times&#8217;, we created a three course \u2018Farm to Fort\u2019 menu for you to enjoy!<\/p>\n<p><strong>\u201cFrom Farm to Table\u201d<\/strong>\u00a0a slogan that brings a smile to your face, right?<br \/>\nIt makes words like \u201chealthy\u201d, \u201cfresh\u201d and \u201cnatural\u201d pop up in your head and makes you think about how your ancestors used to eat. Produce fresh from the land on your plate, wouldn\u2019t it be wonderful to enjoy food that way? Fort Nassau\u2019s kitchen staff thinks so!<\/p>\n<p>There are various farms on the island where people with a passion for agriculture grow the nicest veggies and herbs. Who are those idealists with green fingers, what moves them and what produce do they grow? We went \u201cfarm hopping\u201d to see, smell, taste and touch and to listen to the interesting stories from the people who make it all happen.<\/p>\n<h2><strong>Chispalos Urban Hydroponics<\/strong><\/h2>\n<p>Today Chef Thomas, Emerson and Shanaz visited the small hydroponics farm Chispalos. All the micro greens, mint, rosemary and basil used at Fort Nassau is delivered weekly by Roberto, your most friendly, funny, warm-hearted farmer.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-7852\" src=\"https:\/\/fortnassau.com\/wp-content\/uploads\/2020\/06\/5-1.jpg\" alt=\"\" width=\"1025\" height=\"525\" \/><\/p>\n<p>&nbsp;<\/p>\n<h4><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-7848\" src=\"https:\/\/fortnassau.com\/wp-content\/uploads\/2020\/06\/3-1.jpg\" alt=\"\" width=\"1025\" height=\"525\" \/><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><strong>Organic but not officially<\/strong><\/h4>\n<p>Just of the main road, you will find Roberto\u2019s two greenhouses. Built up from scratch and an \u2018ever-growing\u2019 farm, even during \u2018Corona times\u2019. Roberto is still very optimistic as he shows us around and explains passionately about his many types of herbs and greens. At Chispalos they use the \u2018hydrophonics\u2019 system. Although there are no pesticides or other aggressive chemicals used, because the plants are not planted in soil, the produce can\u2019t officially get the label \u2018organic\u2019.<\/p>\n<p>Funfact: the orange plates you see hanging all around are smeared with Vaseline! to attract the tiniest white flies that otherwise land on the crops.<\/p>\n<h4><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-7850\" src=\"https:\/\/fortnassau.com\/wp-content\/uploads\/2020\/06\/4-1.jpg\" alt=\"\" width=\"1025\" height=\"525\" \/><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><strong>Seed or clone\u2026<\/strong><\/h4>\n<p>In addition to buying organic seeds, Roberto also uses a \u2018cloning\u2019 method for new plants as a quicker method of cultivation. Herbs that are frequently cloned are mint and rosemary. \u00a0The salad we use from Chispalos is from a non-GMO seed and takes 2 months from planting to harvesting. Micro greens are faster growers and do very well in the hydroponics system, and they decorative and delicious on the plates!<\/p>\n<h4><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-full wp-image-7846\" src=\"https:\/\/fortnassau.com\/wp-content\/uploads\/2020\/06\/2-1.jpg\" alt=\"\" width=\"1025\" height=\"525\" \/><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><\/h4>\n<h4><strong>New ideas<\/strong><\/h4>\n<p>Why plant this and not that\u2026that\u2019s the question! Roberto visits many restaurants and that is how he gets his ideas for new crops. Chefs bring herbs from abroad and he will try to clone them, or they tip him about a new kind of pepper which he will then try to grow. In short, a real enthusiast and hard worker!
